Mainly the barrage of weapons that seem extremely hard to defend against. On top of the things that will rip through your shield and destroy a system and rip a hole in the hull in 1 shot. You can unlock / access everything from within Easy. The only very minor difference is achievements unlocked on Easy will say you unlocked them on Easy in their tooltip description.
